Cauliflower Soup
Cold weather had arrived and all I want is to eat soups. This one is so easy to make, tasty and smooth!

Ingredients
5 cups (1.25 litres) vegetable broth
1 onion, peeled and chopped in big pieces
6 cups (1.5 litres) cauliflower, cut into florets
Salt & pepper
¼ tsp (1 ml) salted herbs from the lower st-lawrence river area (I used these ones)
Preparation
In a large pot, add the broth, onion and cauliflower. Season with salt and pepper. Bring to a boil and simmer over medium heat for 15 to 30 minutes, until vegetables are very soft when pricked with a fork.
Smooth the soup into purée using a hand arm or let cool and transfer in a blender.
Add the salted herbs and adjust seasonning as desired (for example, you may add more salt if using an unsalted broth).
