Cauliflower Soup

Cold weather had arrived and all I want is to eat soups. This one is so easy to make, tasty and smooth!

Ingredients

  • 5 cups (1.25 litres) vegetable broth

  • 1 onion, peeled and chopped in big pieces

  • 6 cups (1.5 litres) cauliflower, cut into florets

  • Salt & pepper

  • ¼ tsp (1 ml) salted herbs from the lower st-lawrence river area (I used these ones)

Preparation

  1. In a large pot, add the broth, onion and cauliflower. Season with salt and pepper. Bring to a boil and simmer over medium heat for 15 to 30 minutes, until vegetables are very soft when pricked with a fork.

  2. Smooth the soup into purée using a hand arm or let cool and transfer in a blender.

  3. Add the salted herbs and adjust seasonning as desired (for example, you may add more salt if using an unsalted broth).
