Gusta Big Nachos
In collaboration with Gusta, I present to you the tastiest nachos ever.

Servings: an appetizer that serves 4
Ingredients
Sweet potatoe and squash puree
1 cup acorn squash, cut into large cubes
1/2 cup sweet potato, cut into large cubes
1 clove of garlic
1/2 cup of unsweetened soymilk
Nachos
140g of nachos
1/2 cup green onions, sliced
1/2 cup black beans (cooked at home or canned)
1/4 block of Gusta classico seitan loaf, cut into small pieces
1/2 Gusta original cheese, shredded
1/2 cup of salsa
1/2 cup tomatoes, diced
1/2 cup vegan sour cream (ex : Tofutti)
1/4 cup black olives, sliced
Fresh cilantro, to taste
Preparation
Sweet potatoe and squash puree
In a saucepan filled with water, add the squash, sweet potatoes and the garlic clove and bring to a boil. Bake 5 minutes or until pieces are tender, pricking with a fork. Empty the water and let cool.
In the same saucepan, add the milk and mash the squash, sweet potato and garlic with a hand blender. You can add more milk until desired consistency.
Nachos
Preheat the oven to 350F.
Spread the nachos on a baking sheet and add the desired amount of sweet potato puree. Sprinkle with green onions, beans, seitan and cheeze. Cook for 10 minutes or until cheeze is melted.
Add salsa, tomatoes, sour cream, olives and coriander.
