Oatmeal, Chocolate & Cranberry Cookies

These cookies are chewy inside and crispy on the outside: the best of both worlds!

I think they’re my favorite cookies, but shhhh it wouldn’t be fair to the other ones!

Servings : 30 cookies

Ingredients

  • ¾ cup (175 ml) brown sugar

  • ¾ cup (175 ml) vegan butter, softened (ex: Earth Balance)

  • ½ cup (125 ml) sugar

  • 1 Tbsp (15 ml) baking powder

  • ¼ cup (60 ml) water

  • 2 tsp (10 ml) vanilla

  • ¾ cup (175 ml) all-purpose flour

  • ½ tsp (2.5 ml) baking soda

  • 1 tsp (5 ml) ground cinnamon

  • 3 cups (750 ml) oatmeal

  • ½ cup (125 ml) dark chocolate

  • 1 cup (250 ml) dried cranberries (or fresh cranberries, diced)

Preparation

  1. Line a baking sheet with a silicone mat.

  2. Preheat oven to 350°F (180°C).

  3. In a big bowl, with a whisk, cream the butter with brown sugar, sugar, baking powder, water and vanilla.

  4. Add the flour, the baking soda and the cinnamon and mix with a spatula.

  5. Add the oatmeal, the chocolate chunks and the cranberries and mix.

  6. Place dough balls on baking sheets. Space the balls considering that the cookies will spread a little.

  7. Cook for 12 à 15 minutes.
