Oatmeal, Chocolate & Cranberry Cookies
These cookies are chewy inside and crispy on the outside: the best of both worlds!

I think they’re my favorite cookies, but shhhh it wouldn’t be fair to the other ones!

Ingredients
¾ cup (175 ml) brown sugar
¾ cup (175 ml) vegan butter, softened (ex: Earth Balance)
½ cup (125 ml) sugar
1 Tbsp (15 ml) baking powder
¼ cup (60 ml) water
2 tsp (10 ml) vanilla
¾ cup (175 ml) all-purpose flour
½ tsp (2.5 ml) baking soda
1 tsp (5 ml) ground cinnamon
3 cups (750 ml) oatmeal
½ cup (125 ml) dark chocolate
1 cup (250 ml) dried cranberries (or fresh cranberries, diced)
Preparation
Line a baking sheet with a silicone mat.
Preheat oven to 350°F (180°C).
In a big bowl, with a whisk, cream the butter with brown sugar, sugar, baking powder, water and vanilla.
Add the flour, the baking soda and the cinnamon and mix with a spatula.
Add the oatmeal, the chocolate chunks and the cranberries and mix.
Place dough balls on baking sheets. Space the balls considering that the cookies will spread a little.
Cook for 12 à 15 minutes.
