Sugar Fudge Mugcake
You still have leftovers from my sugar fudge recipe? You still want a sweet dessert, but quick to make? This is the perfect, super easy, vegan mugcake recipe ready in 5 minutes!
You won’t be surprised to learn that this recipe is very sweet… I therefore suggest a regular size, for the sweet tooth, and a large size, for those who want to share… or who need a larger dose of sugar!

Ingredients
Regular size
4 Tbsp (60 ml) all-purpose flour
¼ tsp (1.25 ml) baking powder
A pinch of salt
1 Tbsp (15 ml) vegetable oil
1 Tbsp (15 ml) maple syrup
2 Tbsp (30 ml) plant-based milk (I used plain soy milk)
1 tsp (5 ml) vanilla
A taste of caramel extract (optional)
3 Tbsp (45 ml) of sugar fudge crumbs
1 cube of 1.5 cm sugar fudge
Large size
7 Tbsp (105 ml) all-purpose flour
½ tsp (2.5 ml) baking powder
¼ tsp (1.25 ml) salt
2 Tbsp (30 ml) vegetable oil
2 Tbsp (30 ml) maple syrup
3 Tbsp (45 ml) plant-based milk (I used plain soy milk)
2 tsp (10 ml) vanilla
¼ tsp (1.25 ml) caramel extract (optional)
5 Tbsp (75 ml) of sugar fudge crumbs
1 cube of 1.5 cm sugar fudge
Preparation
Choose a microwave-safe cup and the desired cake size (regular or large).
In the mug, add the flour, salt and baking powder and mix.
Add the oil, maple syrup, milk, vanilla, caramel extract and the sugar fudge crumbs. Stir well.
Insert the piece of sugar fudge in the middle of the mixture.
Cook in the microwave for 50 seconds (for the regular size) or 80 seconds (for the large size) for a soft texture. Continue for 10 seconds if you want it to be more cooked.
