Tofu-Ham
During the whole holiday season, I saw pictures of the famous Tofu-Ham from Une maman végane! People couldn’t believe the taste and they were right, it's really delicious!
This recipe is also perfect for sugar shack season.

Ingredients
1 block (454 g) extra-firm tofu
1 cup of water
1/2 cup maple syrup
1/4 cup tamari or soy sauce
1 tsp liquid smoke
1 Tbsp old style mustard
1/2 tsp salt
About fifteen cloves
Preparation
Preheat the oven to 300 F.
Unpack the tofu, then rinse and place on a cutting board. On each side, in the direction of the length, place a sushi stick. Slice the tofu widthwise until the knife touches the stick. Make slices about half a centimeter.
In a bowl, mix all remaining ingredients except cloves and set aside.
Choose a baking dish that’s only slightly larger than the tofu block. If your dish is too big, cut a large sheet of aluminum foil to cover the bottom of the pan and create a false edge to shorten the pan to a mold just two centimeters longer than the tofu block.
Place the tofu in the baking dish. Add a clove between each slice of tofu, taking care to alternate left and right so that the flavor is well dispersed. Pour the liquid mixture over the tofu making sure the sauce goes between the slices. The marinade must submerge the tofu. So, make additional marinade if it’s not the case.
Cover tightly with aluminum foil and bake for 2 hours.
After cooking, let cool slightly, remove the cloves and serve with the cooked marinade.
