Quinoa & Sweet Potato Salad

Those who know me know that I am not a fan of salads .. but this one is really tasty and satisfying!

A simple salad that will give you energy!

Ingredients

Salad

  • 1 cup (250 ml) dry quinoa

  • 2 cups (500 ml) water

  • 2 cups (500 ml) sweet potato, peeled and cut into cubes

  • Olive oil

  • Salt & pepper

  • 1 cup (250 ml) dried cranberries

  • 1 cup (250 ml) cherry tomatoes, cut in half

  • 2 cups (500 ml) spinach, roughly chopped

  • 2 cups (500 ml) chickpeas (canned or cooked)

  • 1/4 cup (65 ml) fresh basil, chopped


Vinaigrette

  • 2 Tbsp (30 ml) olive oil

  • 2 Tbsp (30 ml) balsamic vinegar

  • 2 Tbsp (30 ml) Dijon mustard

  • 2 Tbsp (30 ml) maple syrup

Preparation

  1. Preheat the oven to 350F (180 C).

  2. Spread the sweet potato cubes on a baking sheet and coat with oil, salt and pepper. Bake 15 minutes or until tender, pricking with a fork.

  3. Cook the quinoa in the water as indicated on the package (app 15 min). It should make 3 cups of cooked quinoa.

  4. In a small bowl, combine all the ingredients for the vinaigrette.

  5. Put all the ingredients for the salad in a large bowl with the vinaigrette and mix. Adjust seasoning to taste.
