Lentil & Quinoa Salad

I’m not a fan of salads… So when I post one on my blog, it's because it’s really tasty and satiating!

Ingredients

Salad

  • 1 ½ cup (375 ml) quinoa, cooked

  • 1 sweet potato, in cubes and baked

  • 1 big apple, in cubes

  • 1 green onion (shallot), chopped

  • ½ cup (125 ml) kale, chopped

  • ½ cup (125 ml) cucumber, in cubes

  • ¼ cup (60 ml) dried cranberries

  • 540 ml (or 1 low-sodium can) lentils, cooked

Dressing

  • 2 Tbsp (30 ml) olive oil

  • 2 Tbsp (30 ml) balsamic vinegar

  • 1 Tbsp (15 mL) Dijon mustard

  • 1 Tbsp (15 mL) maple syrup

Preparation

  1. In a large bowl, mix all the ingredients for the salad.

  2. Mix the ingredients for dressing, then add to salad. Adjust seasoning to your taste.
