Spinach & Ricotta Stuffed Shells

For this recipe, I used Vegan Touch ricotta, but you can also make yours homemade, for example with almonds.

Ingredients
14 giant pasta shells
175 g of vegan ricotta (I used the one from Vegan Touch, but you can make yours homemade)
3 green onions, thinly sliced
120 g spinach, finely chopped
700 ml tomato sauce for pasta (homemade or purchased)
110 g vegan cheese, shredded (I used ½ block of Gusta Italiano cheeze)
Vegan parmesan, to taste
Preparation
Preheat the oven to 350 ° F.
Cook the pasta, as indicated on the package, then drain and pass under cold water.
In a bowl, mix ricotta, spinach and green onions.
Spread some sauce in the bottom of a large baking dish.
Stuff the shells with the ricotta mixture and place in the dish.
Cover with remaining sauce and cheeze. Sprinkle some parmesan cheeze.
Put in the oven for 30 minutes.
