Pasta Carbonara
I just invented this pasta carbonara recipe because I had a big craving for it! It’s really the perfect comfort food!!! And as good as the original.

Ingredients
375 g pasta (spaghetti or linguine)
3 Tbsp (30 ml) olive oil
1 white onion, chopped
3 cloves of garlic, minced
1 package (156 g) of vegan bacon, diced (eg : Yves or Miss Recipe)
2 cups (500 ml) soy cream (eg : Belsoy found next to soy milk at the grocery store, look in the refrigerated and non-refrigerated sections)
1 Tbsp (15 ml) nutritional yeast
Pepper
Optional: vegan parmesan (eg : Earth Island)
Preparation
Cook pasta according to package directions.
In a frying pan, fry bacon in 1 Tbsp of oil. Add water to soften. Cook for about 5 minutes.
Meanwhile, in a large frying pan, saute the onion and garlic in 2 Tbsp of oil until brown (about 5 minutes).
Add cream, yeast, pepper and bacon and cook for 2 minutes.
Add the pasta to the sauce and mix well. Sprinkle with parmesan if desired.
